\nDie Herstellungsweise ist originell und sehr nat\u00fcrlich: Der Traubensaft (vor allem Muskattraube) verg\u00e4rt nur teilweise und sehr langsam (in K\u00fchlr\u00e4umen) bevor er auf Flaschen gezogen wird. Durch den Druck in der Flasche h\u00f6rt die G\u00e4rung auf und bringt den Wein zum perlen, l\u00e4sst aber einen grossen Teil des Fuchtzuckers unvergoren. Die Clairette wird so zu einem sehr fruchtigen Sekt mit wenig Alkohol (ca. 7,5 %), den sie unbedingt in Vercheny kosten sollten.<\/p>\n

Der Cr\u00e9mant de Die ist trockener und alkoholischer. Er wird aus Clairettetrauben (was zu einiger Verwirrung f\u00fchrt…) nach Champagnerart hergestellt.<\/p>\n

Unsere Lieblingsclairette kommt von der der kleinen Kooperative „‚Union des Jeunes Viticulteurs R\u00e9coltants“ in Vercheny.<\/p>\n
