The pressure inside the bottle stops the fermentation of the wine and brings up the beads, leaving a large part of the unfermented grape juice. The Clairette then becomes a very fruity sparkling wine poor in alcohol (7.5%), you should taste it in Vercheny.<\/p>\n<p>The \u201eCr\u00e9mant de Die\u201c is dry and contains more alcool.
