Clairette de Die

The famous sparkling wine “Clairette de Die” grows of course in Die, but the bulk of production is located on the slopes and on the heights of Vercheny and the surrounding villages.
The manufacturing method is very original : The grape juice (especially muscat grape) ferments only partially and very slowly (in cold) before it is bottled. The pressure inside the bottle stops the fermentation of the wine and brings up the beads, leaving a large part of the unfermented grape juice. The Clairette then becomes a very fruity sparkling wine poor in alcohol (7.5%), you should taste it in Vercheny.

The „Crémant de Die“ is dry and contains more alcool. It’s produced from the smaller Clairette grapes (witch is rather confusing) in a similiar method as champagne.

Our favorite Clairette comes from the small cooperative “‘Union des Jeunes Viticulteurs Récoltants” in Vercheny.
